"Indian food" always conjures up a riot of flavors resulting from the country's incredible diversity of landscape, climate, and cultures. A similar perspective can be used to explain Maharashtra's culinary culture. This state's landscape is a patchwork of culinary habits, ranging from the briny flavors of the coast to the rustic flavors of the interior. Apart from a few signature dishes (such as Vada Pav and Pav Bhaji) that have made their way onto restaurant menus across the country, traditional Maharashtrian cuisine is relatively unknown outside of the state. Maharashtrian cuisine is one of the most nutritious and underappreciated cuisines in India.
