Enjoy these sweet pink cupcakes at the baptism of your little girl. Not only are they tasty, but they're also perfect for the event!
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp baking soda. 1/4 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup buttermilk. Pink food coloring optional. Vanilla frosting. Pink sprinkles or decorations.
Instructions: Warm up your oven to 350F 175C and put cupcake liners in a muffin tin. Mix the flour, baking powder, baking soda, and salt in a bowl with a whisk. Put away. Melt the butter and mix it with the sugar in another bowl until the mixture is light and fluffy. One egg at a time, making sure to mix well after each addition. Add the vanilla extract and mix well. Add the dry ingredients to the wet ingredients one at a time, mixing in the buttermilk between each addition. Start with the dry mixture and end with the buttermilk. Don't mix any further than that. You can add a few drops of pink food coloring to the batter and mix it until it's the color you want. Fill each cupcake liner about two-thirds of the way to the top with batter. In a hot oven, bake for 18 to 20 minutes, or until a toothpick stuck in the middle comes out clean. Let the cupcakes cool for a few minutes in the pan, then move them to a wire rack to cool all the way down. After the cupcakes are completely cool, frost them with vanilla frosting and decorate them however you like with pink sprinkles or other things.
