With its tender chicken, pasta, and fresh vegetables tossed in a tangy barbecue dressing, this BBQ Chicken Pasta Salad is a real treat. This dish is great for potlucks, picnics, or as a filling lunch or dinner.
Ingredients: 12 oz pasta, cooked and cooled. 2 cups shredded cooked chicken. 1 cup cherry tomatoes, halved. 1/2 cup red onion, finely chopped. 1/2 cup corn kernels, cooked. 1/4 cup fresh cilantro, chopped. 1/2 cup barbecue sauce. 1/4 cup mayonnaise. 1 tablespoon apple cider vinegar. Salt and pepper to taste. 1/2 cup shredded cheddar cheese optional.
Instructions: Mix the cooked pasta, chicken shreds, cherry tomatoes, red onion, corn, and cilantro in a large bowl. Put the barbecue sauce, mayonnaise, and apple cider vinegar in a different small bowl and mix them together with a whisk. Add the barbecue sauce to the pasta and toss it around until it's well covered. Add pepper and salt to taste. You can add shredded cheddar cheese on top if you want to. Put it in the fridge for at least 30 minutes before serving so the flavors can mix. Enjoy! Serve cold.
