Zucchini Carpaccio Salad is a bright and refreshing Italian dish. Zucchini slices are tossed in a tangy vinaigrette and topped with basil, cherry tomatoes, pine nuts, and Parmesan. It goes well with any meal as an appetizer or side dish.
Ingredients: 2 medium zucchinis, thinly sliced. 1/4 cup extra-virgin olive oil. 2 tablespoons lemon juice. 1 clove garlic, minced. Salt and freshly ground black pepper to taste. 1/4 cup shaved Parmesan cheese. 1/4 cup toasted pine nuts. 1/4 cup fresh basil leaves, torn. 1/4 cup cherry tomatoes, halved.
Instructions: Put the zucchini slices that have been thinly sliced on a serving platter. Mix the olive oil, lemon juice, garlic powder, salt, and black pepper in a small bowl using a whisk. Spread the dressing on top of the zucchini slices. The zucchinis should have an even layer of shaved Parmesan cheese and toasted pine nuts on top of them. Add cherry tomato halves and torn basil leaves on top. Serve right away and enjoy!
