These mini whole wheat BBQ chicken calzones are a delicious and healthier alternative to traditional pizza. The whole wheat dough adds a nutty flavor and extra fiber, while the barbecue chicken filling with colorful veggies and cheese provides a burst of flavor in every bite.
Ingredients: 1 cup whole wheat pizza dough. 1/2 cup cooked chicken breast, shredded. 1/4 cup barbecue sauce. 1/4 cup shredded mozzarella cheese. 1/4 cup diced red onion. 1/4 cup diced green bell pepper. 1/4 cup diced red bell pepper. 1/4 cup chopped fresh cilantro. 1/4 teaspoon garlic powder. 1/4 teaspoon onion powder. 1/4 teaspoon black pepper. 1/4 teaspoon salt. Cooking spray or olive oil for brushing.
Instructions: Warm the oven up to 425F 220C and put a baking sheet inside to heat up. Put the cooked chicken, barbecue sauce, garlic powder, onion powder, black pepper, and salt in a bowl. Be sure to mix the chicken well so that the sauce and spices cover it evenly. Split the whole wheat pizza dough into four equal pieces. On a lightly floured surface, roll out each piece into a small circle about 6 inches across. Put some of the barbecue chicken mixture on one half of each circle of dough. You can put diced red onion, diced green bell pepper, diced red bell pepper, and chopped fresh cilantro on top of it. To make a half-moon shape, fold the other half of the dough over the filling. To seal the edges, press them together, and for a nice look, use a fork to crimp the edges. Grease the baking sheet with cooking spray or olive oil and then put the calzones on it. After the oven is hot, bake the calzones for 12 to 15 minutes, or until they are golden brown and crispy. Take them out of the oven and let them cool down for a few minutes.
