Grilled shrimp with chipotle lime sauce goes well with a fresh salad and a spicy cilantro lime dressing. If you want a light and tasty BBQ meal, this dish is perfect.
Ingredients: 1 lb large shrimp, peeled and deveined. 2 tablespoons olive oil. 2 teaspoons chipotle powder. 2 limes, juiced. Salt and pepper to taste. 8 cups mixed salad greens. 1 cup cherry tomatoes, halved. 1 avocado, sliced. 1/2 red onion, thinly sliced. 1/4 cup chopped fresh cilantro. 1/4 cup crumbled feta cheese optional.
Instructions: Put lime juice, salt, pepper, olive oil, and chipotle powder in a bowl. Combine well. Add the shrimp to the sauce and mix them around. For at least 30 minutes, let it sit. Warm up the grill over medium-high heat. Skewer shrimp that has been marinated. Grill the shrimp for two to three minutes on each side, or until they turn opaque and grill marks show. Put mixed greens, cherry tomatoes, avocado, red onion, and cilantro in a large salad bowl. Put grilled shrimp on top of the salad, and if you want, you can sprinkle it with feta cheese. Put the cilantro lime dressing on top of the salad. Gently toss to mix, and serve right away.
