Ingredients: 1 can 15 oz black beans, drained and rinsed. 1 cup sweet corn kernels, fresh or frozen. 1 ripe avocado, diced. 1 cup cherry tomatoes, halved. 1/4 cup red onion, finely chopped. 1/4 cup fresh cilantro, chopped. 1 jalapeo, seeded and finely diced. 1/4 cup lime juice. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a large bowl, combine black beans, sweet corn, diced avocado, cherry tomatoes, red onion, cilantro, and jalapeo. In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour the dressing over the bean mixture and gently toss until well combined. Refrigerate the salsa for at least 30 minutes to let the flavors meld. Serve chilled and enjoy as a refreshing side dish or with tortilla chips.
