More beans! These are a mix of I can't remember from last year that I used to make a pot of bean with bacon soup. Made it in the instapot yesterday evening and kept it on slow cook mode all day today. Before digging in i mashed some of the beans with the ladle in the pot to thicken up the broth. Tuscan bean soup is one of my top five favorites. Essentially this is Italian bean and bacon soup and it’s perfection.
