A quick rundown from my end at least: Beastwalkers are Shifters, those who can transform into monsters, indistinguishable from a regular monster.
Beastwalker families tend to pass down the same monster 'classification'. For example, Lileas and Leah are both Nu Udra Beastwalkers - but due to the Cephalopod classification, Conan is a Xu Wu Beastwalker! They typically live to the max lifespan of their monster counterpart, even though Beastwalkers seem to only be humans.
Now, for my own ramblings about my Beastwalker stuff!
As I said before, Lileas and Leah are Beastwalkers - Nu Udra to be exact. In this AU, Mahana is a Beastwalker village instead of a Rider village, with their family being comprised of Cephalopod Beastwalkers. Conan inherited this, being a Xu Wu.
When Lileas lost her legs, it attributed to the loss of her two back tentacles. Due to this, she doesn't prefer to turn often as she's been weakened. She lives in the Forbidden Lands, having not been found by the Guild, but instead taken in by Kunafa (how did she get East? Shhh go along with it). She's eventually found out by the Guild when she fights against the Black Flame in her own monster form, recognised by Erik - who turns out to be a fellow Beastwalker, being a Pukei-Pukei.
I have played about with the idea of other ocs being Beastwalkers, you can find all of my ocs as Beastwalkers here! (Although I'll have to correct it since Dusk is a Wyverian... ignore him.)

How does Lileas personally feel about her beast form
Lileas doesn't mind her beast form too much. She does dislike the whole 'losing her sight' thing, but the she's come to be very skilled with controlling her tentacles without issue. Downside: She sometimes forgets the extra limbs aren't there and reaches for something - except no limb moves, and she realises she's reaching with essentially another phantom limb.
First time she hacked up a bit of what appeared to be oil though, that was terrifying
Beastwalker Banbaro Olivia and Pukei-Pukei Erik but she's just picking him up with her big horns and he's flailing like a fool. Air jail as timeout for poisoning her on accident
If he gets away Nu Udra Lileas grabs him and rolls him up into a ball and slam dunks him
Only Astrum Unit knowing Erik is a Beastwalker (for his safety). When you find out he drank the Scarlet Forest's water and Alma freaks out Olivia is holding her breath. Like Alma don't worry he's our poison tester, he's fucking immune to it and unironically enjoys it. Call this motherfucker Maomao
He eats something poisonous and all Olivia sees is feathers burst out of his neck before he calms and is like "Oh yeah don't eat that haha" like Erik you are a weirdo. Just wait until the Nu Udra gets you
