One of my favourite breads has to be a Classic🇮🇹 Italian Focaccia Focaccia is a very easy bread to bake & tastes delicious. It can be flavoured with a range of ingredients such as fresh rosemary, fragrant thyme, juicy cherry tomatoes 🍅 to plump olives 🫒 This recipe is perfect for all.....Discover a selection of world breads this lockdown & get baking.....Have fun & keep safe.....X Makes - 2x30cm focaccia Prep Time - 30-35 minutes + up to 1 hour proving Cook Time - 20-25 minutes Ingredients 10g dried yeast 460g Strong flour 2 tsp fine salt 320ml luke warm water 4 sprigs of rosemary 4-5 ripe cherry tomatoes cut in half Olive oil Sea salt flakes Method 1. Place the flour, salt & dried yeast into a large bowl & mix until combined. 2. Make a well in the centre, slowly pour in the luke warm water & continue to mix the dough for 5-6 minutes before tipping out onto a lightly oiled work surface. 3. Continue to knead the dough for another 5-6 minutes by stretching out & then tucking the sides into the middle as you go. 4. Return the dough to the bowl, cover with lightly oiled cling film & leave in a warm place to prove until doubled size. 5. Divide the dough onto 2x30cm baking trays. Gently stretch to fit pushing it into the corners as you. Leave again to prove until risen & bubbly. 6. Preheat the oven to 220C/425F/Gas mark 7 7. Using the tips of your fingers, dimple the surface of the dough all over. 8. Drizzle with olive oil, sprinkle over with sea salt, press in the cherry tomato halves & scatter over the sprigs of rosemary. 9. Bake in the oven for 20-25 minutes, until golden brushing it with a little more olive oil as it cooks. 9.
