With shredded beef, peppers, cheese, and olives, Beef Tamale Waffles are a tasty take on regular waffles. They're great for brunch or a hearty breakfast.
Ingredients: 1 cup cornmeal. 1 cup all-purpose flour. 2 tablespoons sugar. 1 tablespoon baking powder. 1/2 teaspoon salt. 1 cup milk. 1/4 cup vegetable oil. 2 eggs. 1 cup cooked and shredded beef. 1/2 cup diced onions. 1/2 cup diced red bell pepper. 1/2 cup diced green bell pepper. 1 cup shredded cheddar cheese. 1/4 cup sliced black olives. 1/4 cup sliced green olives. 1/4 cup chopped fresh cilantro. 1/4 cup sour cream for garnish. Salsa for garnish.
Instructions: Mix the flour, sugar, baking powder, and salt with a whisk in a large bowl. Put the milk, vegetable oil, and eggs in a different bowl. Combine well. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Mix in the chopped onions, green bell pepper, red bell pepper, and cheddar cheese. Also add the black olives, green olives, and chopped cilantro. Follow the directions on the package to heat up your waffle iron and lightly grease it. Put the waffle batter on a waffle iron that has already been heated up. Cook until the waffles are golden brown and crispy. Place the beef tamale waffles on a plate and top them with salsa and sour cream. Have fun with your tasty beef tamale waffles!
