Beetroot Brett Saison Hey! i am brewing a beetroot brett saison today! the idea just popped up our minds at CBC in copenhagen this year when we were enjoying Fonta Flora's - Beets, Rhymes and Life with Bulls Blood Beets. a delicious ugly (grey-pink) earthy/soily beet saison with a little funk (maybe from the beets?). we now want to brew a similiar saison but use golden (yellow) beets to keep the ugly colour of the beer ;-) Additionally we are looking for more funk - brett c might be a good second yeast! - for the earthy and grainy character we add rye to the grist (20%) ( + pilsner45% + wheat malt 35%). - mashing at 65°C for a dry saison character! - ferment with saison dupont yeast - brett c for some funky notes - about 1-1.5kg of raw golden beets (peeled and chopped ) in the secondary i have no ideahow this will come out ... but the uglyness of the wort looks very promising! haha I m looking forward to trying this earthy dirty soily beet beer in a few weeks! cheers, heintz
