♨️Soup made with adzuki beans and beetroot leaves
🔸250 gr (1 cup) adzuki beans (dry) 🔸Bunch of beetroot stems with leaves (from 3 beetroots) 🔸2 sticks of celery 🔸150-200gr of fresh tomatoes 🔸2 medium potatoes 🔸1 carrot 🔸1 medium onion 🔸4 cloves of garlic 🔸Black pepper 🔸1 tsp cumin powder 🔸3-4 cubes of chicken bullion 🔸Salt 🔸Sour cream to add to the soup for even better taste (optional)
📝Preparation:
Soak the adzuki beans over night in the water. Drain them and wash them through. In the pressure cooker fry chopped onions and garlic. Then add chopped tomatoes, pinch of black pepper and cumin powder. Stir it through for a minute and add adzuki beans with 2 litres of water. Grate a carrot and celery sticks or cut them into very small peaces, then add it into the pot. Close the lid and cook for about 40 minutes. While its cooking, wash your beetroot leaves together with stems, then slice them. Peal off few potatoes and dice them. After 40 minutes, when beans are cooked, add into it your sliced beetroot leaves and stems. Boil it for about 5 minutes and after that, add sliced potatoes. Leave it to cook for another 5 minutes, till potatoes are cooked. You can flavour your soup by adding a teaspoon of sour cream. Give it a try and you won’t regret!
💢As you see in the pictures above. Mixed in the soup sour cream changes the colour of the soup into light pinky and looks amazing! Taste also!
