The annual strawberry crisp I make for the holiday--happy Beltane (May Day), everyone! And yes, that is a fai ry on a ladybug sitting at the edge of the pan. She usually lives on my kitchen table, coming out on Beltane and then returning to fairyland (my desk drawer, wrapped up safely) at the end of summer. But she wanted to be in the picture. :) Photo description: A square baking dish sitting on a counter. Strawberry Crisp 1 cup uncooked oatmeal 1 cup all-purpose flour 1 cup brown sugar 1/4 cup chopped walnuts, optional (I didn't make it with nuts this year) 1/2 cup butter 1/2 cup sugar 3 cup sliced frozen or fresh strawberries Preheat the oven to 350°F. Grease an 8-inch square pan. Mix together oatmeal, flour and brown sugar. Add nuts, if including them. Cut in butter until crumbly. In another bowl, mix strawberries and white sugar together. Press half the crumb mixture into the bottom of the pan. Cover with strawberries. Sprinkle remaining crumb mixture over top. Bake for 45 minutes. Serve by itself or with vanilla ice cream.
