Ingredients: 6 cups fresh strawberries, hulled and sliced. 1/4 cup granulated sugar. 1 tablespoon cornstarch. 1 cup old-fashioned rolled oats. 1/2 cup all-purpose flour. 1/2 cup packed brown sugar. 1/2 teaspoon ground cinnamon. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted.
Instructions: In a large bowl, toss the sliced strawberries with granulated sugar and cornstarch until evenly coated. In another bowl, mix together oats, flour, brown sugar, cinnamon, and salt. Pour melted butter over the oat mixture and stir until well combined. Spread half of the oat mixture evenly at the bottom of a slow cooker. Top with the strawberry mixture, spreading it out evenly. Sprinkle the remaining oat mixture over the strawberries. Cover and cook on low for 3-4 hours, or until the strawberries are soft and bubbly. Serve warm, topped with whipped cream or vanilla ice cream if desired.
