A Pho is a Pho is a Pho. Well, that’s not entirely true. The best Pho I have ever had was in San Francisco. I have had pho in Saigon, Vietnam; in Yokohama, Japan; in Chicago, Illinois; in New York, here in Virginia, in neighboring DC — and I can definitely tell you they all have their characteristic differences. Whether it is the broth, or the quality of the meat, or even the condiments that come with it — they are each unique in their own way of preparation and the cook making it. Add regional and cultural differences, and that’s why there is always constant argument about who has the best Pho. But a good Pho is a good Pho, no matter where you are on the planet.
