To me they seem like the result of griffon/hippogriff and pony mixingover a period of time and becoming their own subspecies. I believe that the hippogriff/griffon varieties would continuously breed with ponies and in time...they take on the bird traits. In the case of ponies they because VERY attracted to the bright colors and the possibility their foals would survive better. This is because these ponies and other bird races DON'T live in the land of Equestria. They live further away in more harsh conditions. Or even more mild than Equestria depending on where they live and how much they eat. Take for example the puffin pone. They were a result of a Puffin griffon and pony hybridization over many generations. This hybrid would live in a large flock, isolated on an island surrounded by fish. Though there is vegetation, it would not be enough. They would need more protein in their diet. However they can eat vegetation if the time came for it. Well basically the only ones who would be more attracted to such a concept to breed with griffons would be pegasi. Thus why they all have wings. It would be convenient in the end in both parties. After generations, these ponies would be born naturally with the bird colors and carry on the traits of their ancestors. Eventually they become their own isolated communities. They are able to have foals with regular ponies. Overtime though, the traits would fade. Whether they lay eggs or give live birth is unknown. It COULD go either way. My best guess would be live. But again it depends on how you view it. In short they are their own race. And would be a strange phenomenon that would take many generations to make almost permanent. So yeah that is basically my headcanon. Either that or this is what pegasi look like before the interbreeding. Basically pure race stuff. I like the two canons. Both for different reasons. For ancient ponies to have cammo to griffons to look like birds too to confuse. Better things to say. Basically, ponies were basically posing as birds to confused griffons in the beginning griffons were their predators after all, even in mythos it is true.. So why not take on similar traits to the predator to confuse them "IS THIS A GRIFFON OR PONE IDK!?" I also like the mix breeding thing, because it shows at some point they had to learn to survive with eachother and breed to ensure the survival of the babies. Becoming an omnivorous race to have a higher chance of survival and adaptability. FOR ALL I KNOW BOTH THESE THINGS COULD BE TRUE IDK
