Yogg-Saron doesn't call himself the "God of Death" cause he has ties to the Shadowlands or Jailer, he calls himself that cause he is the creator of the Curse of Flesh, the affliction that turned many metal and stone Titan creations into creatures of flesh, thus making them mortal.

Vrykul, Dwarves, Gnomes and eventually Humans, exist cause of him. He created the concept of death for a lot of these races that were meant to be immortal.
