Ingredients: 200g chicken breast, cooked and shredded. 200g dried soba noodles. 1 cup shredded cabbage. 1 carrot, julienned. 2 green onions, thinly sliced. 2 tablespoons black sesame seeds. 3 tablespoons soy sauce. 2 tablespoons rice vinegar. 1 tablespoon sesame oil. 1 tablespoon honey. 1 clove garlic, minced. 1 teaspoon grated ginger. Salt and pepper to taste.
Instructions: Cook soba noodles according to package instructions. Drain and rinse under cold water. Set aside. In a small bowl, mix soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger to make the dressing. In a large mixing bowl, combine cooked chicken, shredded cabbage, julienned carrot, sliced green onions, and cooked soba noodles. Pour the dressing over the salad ingredients and toss until everything is well coated. Sprinkle black sesame seeds over the salad and toss again. Season with salt and pepper to taste. Serve chilled or at room temperature.
