Going back to uni this week

Because I am a shameless Bubbline shipper, my headcanon on Princess Bubblegum's sexuality is that she's bisexual.

I believe the sexuality in Ooo is much more blurred since children and young adults are allowed to govern themselves for the most part. Finn had no problem kissing that frog princess because there was no one telling him guys can't kiss other guys. He simply saw it as a duty of a hero and not in a romantic way. 

When Bubblegum laughed when Princess Cookie wanted to grow up to be a princess, it was a laugh because it was cute, not it being dismissive. He took it the wrong way because he was just a child. In the same way no one was told it was wrong, they also weren't told it was right. An entire history of gender or sexual oppression was taken off the face of the earth and lost over time. So they do no know how to have the conversations in the first place. Cookie held resentment to Bubblegum only and not the Candy Kingdom or Ooo itself. 

The ice king did not assume that Marceline was straight or gay when he offered the left overs from his imagined concert. Even though we've seen Marceline with a steady boyfriend, who someone is dating does not define their sexuality. A woman can be married to a man happily for twenty, thirty years but that does not negate her queer identity, whatever it may be. At the same time with the Marceline/Ice King interactions, he hasn't seen her in years. He has no right to assume a person's sexuality even if the last time he saw her, she defined herself as straight because she was with Ash. 

While Adventure Time is a show about a young boy going on quests and being a hero, there is the recurring theme of preteen, teenage sexuality.
