This Chorizo and Beef Taco Salad is a tasty take on an old favorite. When you mix spicy chorizo with salty beef, you get a hearty and filling meal. Ingredients: 1/2 lb ground beef. 1/2 lb chorizo sausage. 1 cup black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 cup cherry tomatoes, halved. 1/2 red onion, finely chopped. 1/2 cup shredded cheddar cheese. 4 cups lettuce, chopped. 1/4 cup sour cream. 1/4 cup salsa. 1/4 cup cilantro, chopped. 1 lime, juiced. Salt and pepper to taste. Tortilla chips for garnish.
Instructions: Set the ground beef and chorizo sausage in a large skillet over medium-high heat. Cook until the meat is browned and fully cooked. As it cooks, break up the meat into little pieces. Set a small saucepan on medium heat while the meat is cooking. Put in the corn kernels and black beans. Heat through for two to three minutes. Chop the lettuce and put it in a large salad bowl. Add the cherry tomatoes, red onion, and shredded cheddar cheese. Once the meat is done, take it out of the pan and add it to the salad bowl with the vegetables. Squeeze the lime juice and cilantro into a separate bowl. Add the sour cream and mix it with the salsa. Add salt and pepper to taste. Add the dressing to the salad and mix everything together until it's well mixed. Put the Chorizo and Beef Taco Salad in bowls for each person and top with tortilla chips for crunch.
