⠀ HAPPY RELEASE DAY 🥁💥 Bringing you our next NOVIN, we decided to release a new flavor, not modelled after or influenced by any existing alcoholic alternative, opaque stands for itself. ⠀ Exploring a concept we originally started with in our first NOVIN ruby, we wanted to expand the concept of creating a kombucha with a further developed malt profile and use this signature flavour tone as a foreground for opaque. We utilised amylase (enzyme aiding in the conversion of starch to sugar) when cooking the malted barley. After the conversion and a light filtration, we’re left with the sugar source for our kombucha starter, integral to the fermentation and backbone of opaque’s signature profile. ⠀ We kept the tea base to a lighter tonality, mindful in keeping some of the fresh grassier tones while accompanied with hints of fresh apricot. The woodier tones of the flavour are attributed from dried walnut leaves and toasted birch shavings, macerated in both hot and cold stages. Having almost the ideal base flavour to expand upon, these two additions began to transform and further define opaque’s direction, offering a structured tannin profile while giving enough room to the delicate tonality of the tea.
