Boneless pork chops that are marinated in a tasty mix of pineapple, bourbon, and spices. The chops are then grilled to perfection and topped with pineapple slices that have also been grilled. A delicious BBQ recipe that has the right amount of sweetness and saltiness.
Ingredients: 4 boneless pork chops. 1 cup pineapple juice. 1/2 cup bourbon. 1/4 cup soy sauce. 1/4 cup ketchup. 3 tablespoons brown sugar. 2 tablespoons Dijon mustard. 2 cloves garlic, minced. 1 teaspoon ginger, grated. 1/2 teaspoon black pepper. 1/4 teaspoon cayenne pepper. Pineapple slices for garnish. Chopped fresh cilantro for garnish.
Instructions: In a bowl, whisk together pineapple juice, bourbon, soy sauce, ketchup, brown sugar, Dijon mustard, garlic, ginger, black pepper, and cayenne pepper to create the marinade. Place pork chops in a resealable plastic bag and pour half of the marinade over them. Seal the bag and refrigerate for at least 2 hours, or preferably overnight for enhanced flavor. Preheat the grill to medium-high heat. Remove the pork chops from the marinade and discard the used marinade. Grill the pork chops for 4-5 minutes per side, basting with the reserved marinade, until the internal temperature reaches 145F 63C. During the last couple of minutes of grilling, add pineapple slices to the grill and cook until they have grill marks. Remove pork chops and pineapple slices from the grill. Let the pork chops rest for a few minutes before serving. Garnish with grilled pineapple slices and chopped cilantro. Serve hot and enjoy your Pineapple Bourbon BBQ Grilled Boneless Pork Chops!
