Start your New Year's Day with a fun and colorful breakfast! These New Year's Breakfast Pancakes are not only delicious but also perfect for pancake art to celebrate the new year with your loved ones. Get creative with your designs and enjoy a festive breakfast that's as delightful to look at as it is to eat.

Ingredients: 1 cup all-purpose flour. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1 egg. 2 tablespoons melted butter. 1/2 teaspoon vanilla extract. Food coloring various colors. Maple syrup for serving. Whipped cream optional. Sprinkles optional.

Instructions: Mix the flour, sugar, baking powder, baking soda, and salt together in a large bowl. Add the egg, melted butter, vanilla extract, and buttermilk to a different bowl, and mix them together using a whisk. Add the wet ingredients to the dry ones and mix them together just until they are mixed. Don't mix it too much; a few lumps are fine. For your pancake art, put a different color of pancake batter in a different bowl. Put a few drops of food coloring into each bowl and mix them together until they are the color you want. Warm up a griddle or nonstick pan over medium heat and use cooking spray or butter to spread some oil on it. Make your New Year's-themed pancake art on the griddle with squeeze bottles or piping bags. You can make any kind of fun design, like numbers, fireworks, stars, or anything else. The pancakes are done when the top starts to bubble and the edges look set. Flip them over and cook for another one to two minutes, or until they are golden brown and cooked all the way through. Place the rainbow pancakes on a plate and stack them up. If you want, you can add whipped cream and sprinkles to your New Year's Breakfast Pancakes and serve them with maple syrup. Enjoy your fun and tasty start to the new year!
