These tasty griddle cakes have a hint of cornmeal and sweet bursts of fresh blackberries that will take you back to Blackberry Farm.
Ingredients: 1 cup all-purpose flour. 1/2 cup cornmeal. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 cup buttermilk. 1/2 cup milk. 1 large egg. 2 tablespoons melted butter. 1/2 cup fresh blackberries.
Instructions: Mix the sugar, baking powder, baking soda, and salt with a whisk in a large bowl. Mix the buttermilk, milk, egg, and melted butter together in a different bowl. Add the wet ingredients to the dry ones and mix them together just until they are mixed. The fresh blackberries should be added slowly. Put a griddle or nonstick skillet over medium-high heat and use butter or oil to lightly coat it. Put about 1/4 cup of the batter at a time onto the griddle. Cook until bubbles appear on top, then flip and cook until both sides are golden brown. Top it with maple syrup or anything else you like while it's still hot.
