This one-of-a-kind ice cream recipe has the comforting tastes of breakfast. It tastes tangy and rich, and the chopped pancake pieces give it texture and a nostalgic feel. It tastes even better with a drizzle of maple syrup on top.
Ingredients: 2 cups buttermilk. 1 cup heavy cream. 3/4 cup granulated sugar. 1 teaspoon vanilla extract. 1/2 cup chopped pancake pieces cooked. Maple syrup for drizzling, optional.
Instructions: In a mixing bowl, whisk together buttermilk, heavy cream, sugar, and vanilla extract until sugar is dissolved. Churn the mixture in an ice cream maker according to manufacturer's instructions. During the last few minutes of churning, add in the chopped pancake pieces. Transfer the churned ice cream into a freezer-safe container and freeze until firm, typically about 4-6 hours. Serve scoops of the ice cream with a drizzle of maple syrup if desired.
