A good number of years ago, I created this soup for Harvest Fest in Bethlehem. It is called Shanagarry Squash. It is a Curried Coconut Butternut Squash Soup. Back then it was a good solid vegetarian soup (as well as a two time winner of the soup contest for the fest!). But it was time to reinvent and take it another step further. This version in 2019 is completely vegan! The cream has been taken out and replaced with a great technique of roasting white onions until they are pulpy and puréeing them until they are smooth and viscous. The final result turned out better than I had imagined it. I toasted up the butternut squash seeds with some garam masala and garnished it further with some chill oil and chopped coriander. I also made a vegan version of Irish Wheaten Bread to go with it. As I stated previously, I am sensing some sort of change coming about. It feels as though it is positive. It feels as though it has something to do with A Kilt and a Cuppa. As I also stated, I cannot put my finger on it. I am focusing on meditation and creating. I am focusing on reading inspiring material. The main thing I am getting from the meditation that I am doing right now is breaking out of laziness. Too many days it is easy to sit and do nothing when I know I have things that I want to accomplish. That is not to say that relaxing is bad. There needs to be downtime. But, I need to be able to prioritise those things that are important, rather than saying I can do them another time. Then, "another time" becomes never. The following is a piece by the Irish author, poet, and scholar, John O'Donahue. It was originally about retirement. As I read it, I find meaning in starting a new chapter in life also. This is what I am meditating on: In out-of-the-way places of the heart, Where your thoughts never think to wander, This beginning has been quietly forming, Waiting until you were ready to emerge.
