This slow cooker Irish Corned Beef Brisket and Cabbage recipe yields tender, flavorful meat alongside perfectly cooked vegetables, all infused with the rich taste of beef broth and spices. It's a hearty, comforting meal perfect for St. Patrick's Day or any time you crave traditional Irish cuisine.

Ingredients: 1 3-4 lb corned beef brisket with spice packet. 1 small head of cabbage, cut into wedges. 6 medium potatoes, peeled and quartered. 4 medium carrots, peeled and cut into chunks. 1 onion, sliced. 4 cloves garlic, minced. 4 cups beef broth. 1 cup water. 2 bay leaves.

Instructions: Place the corned beef brisket in the slow cooker. Arrange cabbage wedges, potatoes, carrots, onion, and garlic around the brisket. Sprinkle the spice packet over the brisket and vegetables. Pour beef broth and water over everything. Add bay leaves to the pot. Cover and cook on low for 8-10 hours, or until the beef is tender. Once done, remove the brisket and let it rest for a few minutes before slicing. Serve sliced corned beef with vegetables from the slow cooker.
