Broccoli Bread
Rest Day: Broccoli Bread
This recipe turned out a bit on the crumbly side and since it works well as a rest day food but is relatively low in fat as it is, I’d try adding additional fatty ingredients like avocado, butter, or cream cheese.
Ingredients
1 bunch of broccoli, chopped finely 3 tbsp. ground flaxseed meal 1/2 tsp. baking powder 20 g. sweet potato, cooked and diced 3 egg yolks 1 whole large egg 1/2 c. raw almonds, roughly chopped
Instructions
Preheat oven to 400 F. Place all ingredients except for almonds in a food processor (I did it bit-by-bit in a blender) until it resembles a thick batter. Fold in the almonds, leaving a few tablespoons to sprinkle overtop. Grease a breadpan with your choice of oil and pour the batter in. Sprinkle the remaining almonds over the batter. Bake in oven for about 40-45 minutes, or until the bread starts to turn golden brown.
Enjoy toasted with some cheese or yogurt!
