How to make authentic Belgian waffles

this is the Brussels variant, you eat it when it’s warm and you can have all kinds of toppings but is generally served with just powder sugar. popular toppings include: whipped cream, strawberries and ice cream but feel free to add whatever you want

you can not reheat them and are not as good cold, so eat them while they’re warm and fresh! 

the recipe I’m sharing is from a tv cook who makes all the authentic charming recipes the way they should be so if you speak some Dutch, totally check it out, I’ll link it at the end. 

What you need: 

a waffle iron (preferable a big square/rectangle one, the round ones are usually flatter too and the inside won’t be as soft as it should be)

something to lift the waffles (a waffle fork) but if you don’t have that, metal skewers will do or something similar

a ladle 

a sieve

a scale 

a whisk

a spatula

at least 2 bowls 

ingredients (for about 12 waffles):

3 eggs

375 grams of milk

20 grams of fresh yeast or 8 grams of instant yeast

375 grams of lukewarm water

450 grams of self-rising flour

150 grams of melted butter 

salt

toppings (powder sugar)

Instructions:

separate the eggs and put the yolks in the bowl where your batter will be, keep the whites separate for later, whisk to mix yolks 

add the milk and yeast, whisk until the yeast has dissolved

add the water, whisk again

sieve the flour into the bowl slowly and whisk after until there are no more clots (this can be tricky, it clots easily so a few remaining is okay but try to get rid of as much as possible)

melt the butter in a frying pan (or in the microwave like I do bc why not, just make sure to stir often and don’t let it get too hot)

add the butter to the batter while stirring

whip the egg whites in a separate bowl (use whisker or a whisk setting on a kitchen robot) until it’s a foam (do the old if I turn it upside down and if it stays it’s good trick)

use a spatula to carefully mix it with the batter, it’s important that as much air as possible stays in so don’t use a whisk, just softly use the spatula

add a pinch of salt to the batter and use the spatula again to mix

let the batter rest in room-temperature for 20 minutes 

heat your waffle iron to the highest setting 

pour a portion in with a ladle (this depends largely on how big your iron is), usually about an average ladle full is enough, if you pour and it almost reaches the corners, you’re usually good (it’ll spread), but it’s trial and error and I never get it on the first try, it might not look as good but it’s still yummy anyway! 

let it bake! it usually takes 8 to 10 minutes to get ready. do definitely not open in the first 3-4 minutes because it’s a very airy batter and your waffle will collapse :(  the outside should be hard but the inside should be soft (but not liquid), if it’s hard on the outside, stick a pin/ waffle fork in and if the batter is no longer sticking to your pin/whatever it’s good to go 

take it out with a waffle fork (or other tool) and put on a plate

add toppings of your choosing
