Seriously winning: fermented chilli sauce update. This one has been on the ferment since the 20th. I gave it a sample and a bit of blend (I did wish it to be a wetter sauce but it's going to have to stay chunky; it wouldn't blend!) Verdict: this is basically the best ferment I have done so far. Not too salty, not to hot, tangy and with little cumin-seed zings every now and then.
