I have the new Elesh Norn, Mother of Machines out and my opponent has a Burgeoning. Does me playing a land still trigger the Burgeoning?

Yes, it does.

Burgeoning isn't triggering because a land entered the battlefield under your control, but rather because you took the special action of playing a land. Yes, the only effect of playing a land is having a land enter the battlefield, but the cause is more specific than what Elesh Norn is looking to prevent and so the trigger happens as normal.
