I wanted seafood and I wanted fresh for #FoodIsLove x #BurpBlessing. This is my version of PINANGAT NA BISUGO SA KAMATIS. Ingredients: 1/2 kg Bisugo (Threadfin Brim), cleaned and gutted 3 pieces Tomatoes, sliced 1 piece Onion, sliced 5 pieces Calamansi, get the juice 1/4 cup Sesame Oil 2 cups Water 1 tsp Salt 3 pieces Siling Pansigang Procedures: 1. Place half of the slices of tomatoes in the bottom of a pan with some slices of onion. 2. Add each Bisugo on top and then top it with your remaining tomatoes, onion and the siling pansigang. 3. Pour calamansi juice, sesame oil, water and add salt. 4. Let it marinate for a few minutes to let the flavor absorbed. Giving it an extra few minutes will allow the ingredients to sink in and taste even better. 5. Place it in stove and start cooking. 6. Bring it to a boil and adjust heat to low and simmer for about 5 to 10 minutes or until the fish is cooked. Adjust salt to taste. 7. Don’t overcook the fish if you dont like a flaky fish. 8. It is a Sunday. Everyone is at home. So let us make this day special. Cooking for #FoodIsLove is my version of a holiday fave, CALLOS. 🤍 Ingredients: 1 kg Ox Tripe 1 kg Caldereta Cut Beef (should be Ox Tail, but no available) Salt, Whole Peppercorns, Bay Leaves 2 pieces Red Onion, cut in quarters (1 ro be used in pre-cooking and the other for the Callos) 1 can Chick Peas Garbanzo Beans 1 cup Tomato Sauce 1 tbsp Tomato Paste 2 tbsp Spanish Paprika 1 tbsp Italian Seasoning 2 pieces Chorizo de Bilbao, sliced 2 pieces Green Bell, cut in squares 1 piece Garlic, chopped and minced 2 pieces Carrots, cut in cubes 1 Small Bottle Black Olives, cut in 2s 1 tsp Salt 1/2 tsp Ground Black Pepper Procedures: 1. Wash and rub ox trip with rock salt. 3. Pour water in a casserole or cooking pot, add ox tripe and bring to boil and cook for 10 to 15 minutes. 4. Using a pressure cooker, add beef and cleaned ox tripe. Add water, onions, salt, whole pepper corns and bay leaves. Cook for 30 minutes. 5. Seperate the beef from the ox tripe. Cut ox tripe to strips or desired slices. 6. Strain water from the pot, this will be your stock. Set aside. 7. In a seperate pan, heat olive oil. Sauté onions and add chorizo de bilbao. 8. Add the tender ox tripe and beef, garlic, paprika, italian seasoning, salt, pepper, tomato paste and tomato sauce. Let it simmer for 2 to 3 minutes 9. Pour beef stock, add salt and pepper then put-in the carrots. Simmer for 5 minutes. 10. Put-in the carrots, chick peas, olives and bell pepper then simmer for 10 minutes. 11.
