Ingredients: 2 boneless, skinless chicken breasts, diced. 1 tablespoon olive oil. 1 teaspoon chili powder. 1 teaspoon ground cumin. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 1 cup cooked white rice. 1 cup canned black beans, drained and rinsed. 1 cup corn kernels. 1 avocado, sliced. 1/2 cup salsa. 1/4 cup chopped fresh cilantro. 1 lime, sliced.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add diced chicken to the skillet and season with chili powder, cumin, garlic powder, onion powder, salt, and pepper. Cook chicken until no longer pink, about 6-8 minutes, stirring occasionally. In serving bowls, layer cooked rice, black beans, corn, and cooked chicken. Top with avocado slices, salsa, chopped cilantro, and a squeeze of lime juice. Serve immediately and enjoy!
