Ingredients: 2 cups cooked rice. 1 lb ground beef. 1 onion, diced. 1 bell pepper, diced. 1 cup black beans, canned and drained. 1 cup corn kernels. 1 cup salsa. 1 tsp cumin powder. 1 tsp chili powder. 1/2 tsp garlic powder. Salt and pepper to taste. 1 cup shredded cheese. 6 large flour tortillas. 1 cup water.
Instructions: In the pressure cooker, saut diced onions and bell peppers until softened. Add ground beef and cook until browned. Drain excess fat. Stir in cumin powder, chili powder, garlic powder, salt, and pepper. Add cooked rice, black beans, corn, salsa, and shredded cheese. Mix well. Place a portion of the mixture onto each tortilla and roll tightly to form burritos. Place the trivet in the pressure cooker and add 1 cup of water. Arrange the burritos on the trivet, stacking if necessary. Close the pressure cooker lid and cook on high pressure for 5 minutes. Allow natural pressure release for 5 minutes, then manually release any remaining pressure. Carefully remove the burritos and serve with additional salsa and cheese.
