This Spring Strawberry Arugula Salad with Lemon Vinaigrette tastes great and is good for you. It's perfect for a Paleo, AIP, or Whole 30 diet. Ingredients: 4 cups fresh arugula. 1 cup sliced strawberries. 1/4 cup chopped fresh mint leaves. 1/4 cup chopped fresh basil leaves. 1/4 cup sliced red onion. 1/4 cup extra-virgin olive oil. 2 tablespoons fresh lemon juice. 1 tablespoon raw honey optional, omit for Whole 30. Salt and pepper to taste.
Instructions: In a large salad bowl, combine the arugula, sliced strawberries, chopped mint, chopped basil, and sliced red onion. In a small bowl, whisk together the extra-virgin olive oil, fresh lemon juice, and raw honey if using. Drizzle the lemon vinaigrette over the salad and toss to coat the ingredients evenly.
