Ingredients: 1 lb butter beans, soaked overnight. 1 onion, chopped. 2 carrots, diced. 2 celery stalks, chopped. 3 cloves garlic, minced. 6 cups vegetable broth. 1 can 14 oz diced tomatoes. 1 teaspoon dried thyme. 1 teaspoon dried rosemary. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Warm up the olive oil in a big pot on medium heat. Add the garlic, celery, carrots, and onions. Saut the veggies until they become soft. Add the diced tomatoes, vegetable broth, soaked butter beans, rosemary, thyme, and salt and pepper.
