Ingredients: 1 cup green lentils, rinsed. 1 onion, diced. 2 carrots, diced. 2 celery stalks, diced. 3 cloves garlic, minced. 1 can 14 oz diced tomatoes. 4 cups vegetable broth. 1 tsp cumin. 1 tsp paprika. 1/2 tsp turmeric. Salt and pepper to taste. 2 cups kale, chopped.
Instructions: You can put lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, cumin, paprika, turmeric, salt, and pepper in a slow cooker. Mix things together well. Set the timer for 6 to 8 hours on low or 3 to 4 hours on high. Cover and cook until the lentils are soft. Just before the end of the cooking time, add the chopped kale. If necessary, change the seasoning. Enjoy while hot!
