Lemon Butter Scallops are a quick and elegant seafood dish that bursts with flavor. The succulent scallops are seared to perfection and then tossed in a tangy lemon butter sauce, creating a dish that is both light and indulgent.
Ingredients: 12 large scallops. 2 tablespoons unsalted butter. 2 cloves garlic, minced. 1 lemon, juiced and zested. Salt and pepper, to taste. Fresh parsley, chopped, for garnish.
Instructions: Pat the scallops dry with paper towels and season with salt and pepper. In a large skillet, melt 1 tablespoon of butter over medium-high heat. Add the scallops to the skillet and cook for 2-3 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside. In the same skillet, melt the remaining tablespoon of butter. Add minced garlic and cook until fragrant, about 1 minute. Add lemon juice and zest to the skillet, stirring to combine. Return the scallops to the skillet, tossing them in the lemon butter sauce for 1-2 minutes. Serve immediately, garnished with fresh parsley. Enjoy!
