These homemade pierogi are filled with tasty cabbage and onions that have been caramelized. They are a comforting and tasty dish. Great for a cozy dinner at home.
Ingredients: 2 cups all-purpose flour. 1/2 cup warm water. 1 egg. 1/2 teaspoon salt. 1 tablespoon vegetable oil. 1 small head of cabbage, thinly sliced. 2 onions, thinly sliced. 2 tablespoons butter. Salt and pepper to taste. Sour cream for serving.
Instructions: Put the flour and salt in a bowl and mix them together. Mix the egg, vegetable oil, and warm water together in a different bowl. Slowly add the wet mixture to the flour while mixing it in. Do this until a dough forms. For five minutes, knead the dough on a floured surface. Then, cover it and let it rest for thirty minutes. Set the dough aside while you heat the butter in a skillet over medium-low heat. Add the cabbage and onions that have been sliced to the pan. Cook, stirring every now and then, for about 20 minutes, or until the vegetables are soft and caramelized. Separate the dough into two pieces, and on a floured surface, roll out each piece thinly. Cut circles in the dough that are about 3 inches across with a round cutter or a glass. Put some of the cooked cabbage and onions in a sugar syrup in the middle of each circle of dough. To make a half-moon shape, fold the dough over the filling and pinch the edges to seal. Bring a large pot of salted water to a boil. Cook the pierogi one at a time for three to four minutes, or until they float to the top. To drain, use a slotted spoon to take the pierogi out of the pot. Put the pierogi on the table hot with sour cream on top, and enjoy!
