Ingredients: 1 lb ground beef. 1 tbsp Cajun seasoning. 4 burger buns. 1 cup collard greens, chopped. 12 fresh oysters. 1 cup cornmeal. 1 cup buttermilk. Vegetable oil for frying. Salt and pepper to taste. 4 slices of cheese optional. 4 tbsp mayonnaise. Lettuce and tomato slices for garnish.
Instructions: In a bowl, combine the ground beef and Cajun seasoning. Form 4 burger patties and season with salt and pepper. Set aside. In a separate bowl, mix the cornmeal with salt and pepper. Dip each oyster into buttermilk and then into the cornmeal mixture to coat evenly. Heat vegetable oil in a deep pan or fryer to 350F 175C. Fry the oysters until they are golden brown and crispy, about 2-3 minutes per oyster. Remove and drain on paper towels. In a skillet, saut the chopped collard greens until they are tender. Season with salt and pepper to taste. Grill the burger patties to your desired level of doneness, adding cheese slices if desired during the last minute of grilling. Toast the burger buns on the grill or in a toaster until they are lightly browned. Assemble the burgers: Spread mayonnaise on the bottom half of each bun. Place a lettuce leaf on top, followed by a burger patty, collard greens, fried oysters, and tomato slices. Top with the other half of the bun. Serve your Cajun Burger with Collard Greens and Fried Oysters hot and enjoy!
