Reposted from @rannabatii There's a Bengali proverb, "গাছে কাঠাল, গোঁফে তেল।" . Which literally means, Jackfruit on the tree, and you're already oiling your moustache. And the deeper meaning of this is, as breaking open a jackfruit is extremely tedious and thereafter separating the arils from the main inedible parts requires time. While this process is on, the jackfruit oozes out a sticky, gooey gluelike substance that makes your fingers stick together- and thus makes gripping the jackfruit difficult. Since this goo is mainly proteins, it dissolves in oil (mustard oil is primarily used but refined vegetable oil may work as well)- and thus it's customary (and albeit necessary) to put oil on your hands while you break open the jackfruit..
