we have been using an Anova for 8-10 years. god, maybe more? it’s one of those devices that has gotten more popular, spawning more models, and becoming slightly LESS expensive than it was when we first got it.
on the balance, if you freeze a lot of your bulk food and staples (proteins, soups/stews) a sous vide can be an investment that pays for itself fairly quickly in terms of your labor and quality of life.
there are drawbacks beyond the money. our house is old and we have very little counter space. the giant tub of water you need in order to efficiently sous vide basic stuff is roughly the size of a large toaster oven.
lacking anywhere better to keep it (close to an outlet) ours sits on the stove, on the back left burner. and I live in fear of the day we accidentally click on the wrong burner…
