Ingredients: 1 cup couscous. 1 1/4 cups boiling water. 1/2 cup cherry tomatoes, halved. 1/2 cucumber, diced. 1/4 red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup feta cheese, crumbled. 3 tablespoons olive oil. 2 tablespoons lemon juice. Salt and pepper to taste.
Instructions: Place the couscous in a heatproof bowl. Pour the boiling water over the couscous, cover, and let it sit for 5 minutes. Fluff the couscous with a fork to separate the grains. In a large mixing bowl, combine the couscous, cherry tomatoes, cucumber, red onion, parsley, mint, and feta cheese. In a small bowl, whisk together the olive oil and lemon juice. Season with salt and pepper to taste. Pour the dressing over the couscous salad and toss to combine. Chill in the refrigerator for at least 30 minutes before serving.
