Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 3/4 cup unsweetened cocoa powder. 1/2 teaspoon salt. 1 cup chopped pecans or walnuts optional. 14-16 soft caramel candies. 1/4 cup heavy cream.
Instructions: Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Melt the butter and mix it with the sugar in a large bowl until the mixture is light and fluffy. After adding the vanilla extract, beat in the eggs one at a time. Mix the all-purpose flour, cocoa powder, and salt together in a different bowl. Slowly add the dry ingredients to the wet ones and mix them together until they are just combined. You can add chopped pecans or walnuts if you want to. Put the dough on the baking sheet that has been prepared. Roll it into 1-inch balls with your hands. To make a hole in the middle of each dough ball, press your thumb or the back of a spoon into it. Put the cookies in an oven that is already hot for 10 to 12 minutes. Get the caramel filling ready while the cookies are baking. Put the soft caramel candies and heavy cream in a bowl that can go in the microwave. For 30 seconds at a time, stir the caramel mixture in the microwave until the caramels are melted and the mixture is smooth. To cool the cookies down, take them out of the oven after they're done baking. Melt the caramel and carefully spoon it into the holes in each cookie.
