Instructions: Preheat your oven to 400F 200C. In a large mixing bowl, combine the butternut squash cubes, olive oil, cinnamon, salt, and pepper. Toss to coat the squash evenly. Spread the seasoned squash cubes out on a baking sheet in a single layer. Roast the squash in the preheated oven for 25-30 minutes or until it's tender and slightly caramelized, flipping the cubes once halfway through. While the squash is roasting, prepare the salad base. Arrange mixed greens on serving plates. Once the roasted squash has cooled slightly, add it to the salad plates on top of the greens.
