This Carrot Ginger Salad Dressing will make your salads look and taste great. Fresh carrot and ginger give it a sour and slightly sweet kick, and the soy sauce and rice vinegar give it more depth of flavor. It makes your salad taste better and is better for you.
Ingredients: 1 large carrot, peeled and chopped. 1-inch piece of fresh ginger, peeled and minced. 2 tablespoons rice vinegar. 1 tablespoon soy sauce. 1 tablespoon honey. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a blender or food processor, mix the ginger and carrot pieces. Put honey, soy sauce, rice vinegar, and olive oil in the blender. If you need to, add more olive oil to make the mixture the right consistency. Blend until it's smooth and creamy. Add salt and pepper to taste, and then blend it again to mix everything together. Put the dressing in a jar or other container and put it in the fridge until you're ready to use it. Enjoy it on top of your favorite salad!
