This BBQ carrot raisin salad is a sweet and tangy side dish perfect for any barbecue or outdoor gathering. The combination of grated carrots and plump raisins coated in a creamy dressing creates a refreshing and satisfying salad.
Ingredients: 4 large carrots, grated. 1 cup raisins. 1/2 cup mayonnaise. 2 tablespoons honey. 1 tablespoon apple cider vinegar. 1/4 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup chopped fresh parsley optional.
Instructions: Grate the carrots and add the raisins to a large bowl. Mix mayonnaise, honey, apple cider vinegar, salt, and black pepper in a small bowl with a whisk until everything is well mixed. Add the dressing to the carrot and raisin mix. Mix everything together until it's all covered. Put it in the fridge for at least an hour with the lid on before serving. If you want, you can add chopped parsley as a garnish before serving.
