This Yummy Creamy Carrot Sauce Dip is a tasty and healthy alternative to regular dips. Fresh carrots and Greek yogurt make it healthy, and it's great for a snack or as an appetizer at a party.
Ingredients: 2 large carrots, peeled and chopped. 1/2 cup plain Greek yogurt. 2 cloves garlic, minced. 2 tablespoons olive oil. 1 tablespoon lemon juice. Salt and pepper to taste.
Instructions: For about 10 to 12 minutes, or until soft, boil the chopped carrots in water. After you drain the carrots, let them cool down a bit. Use a blender or food processor to mix the cooked carrots with the Greek yogurt, garlic that has been minced, olive oil, lemon juice, salt, and pepper. To make it smooth and creamy, scrape down the sides of the bowl as needed. Check the seasoning and make changes if needed. Put the creamy carrot sauce dip in a bowl that can be used for serving. This dish goes well with chips, crackers, or vegetables of your choice.
