Cashew Chicken Rotini Salad is a tasty and filling salad with crunchy cashews, tender chicken, and a tasty dressing. It's great for a light lunch or as a side dish at parties and picnics.
Ingredients: 2 cups cooked rotini pasta. 2 cups cooked chicken breast, diced. 1/2 cup cashews, roasted and chopped. 1/2 cup red bell pepper, diced. 1/2 cup green bell pepper, diced. 1/4 cup green onions, thinly sliced. 1/4 cup fresh cilantro, chopped. 1/4 cup mayonnaise. 1/4 cup Greek yogurt. 2 tablespoons soy sauce. 1 tablespoon honey. 1 teaspoon ginger, minced. 1/2 teaspoon garlic, minced. Salt and pepper to taste.
Instructions: Chicken breasts cut into small pieces, cashews chopped up, red and green bell peppers diced up, green onions sliced, and cilantro chopped up should all be put in a large bowl. To make the dressing, put the Greek yogurt, soy sauce, honey, minced ginger and garlic, salt, and pepper in a separate small bowl. Whisk the ingredients together until mixed well. Put the salad ingredients in a large bowl. Add the dressing. Toss everything together until it's well mixed. Put the Cashew Chicken Rotini Salad in the fridge for at least 30 minutes before you serve it so that the flavors can mix. If you want, you can top the salad with extra cashews and cilantro before serving it cold.
